All 39 MATCHA is processed in Kyoto. The reason Kyoto matcha tastes exceptional is due to its unique traditional production method.

Stone Kiln Steaming - Kyoto's Traditional Technique

Tencha leaves are first steamed - the most critical step. Kyoto still uses brick-built steaming kilns, allowing heat to transfer gently, reducing unevenness, and drawing out the leaves' sweetness and umami. This creates a mellow, sweet aroma with deep richness.

Kyoto's Unique Brick Drying - Aroma Maximization

Steamed tencha is immediately dried using rare brick drying furnaces. The gentle heat, similar to far-infrared radiation, preserves the leaves' natural fragrance while delicately removing moisture without destroying sweetness. This creates rich aroma and depth of flavor impossible with conventional drying machines.

Stone Mill Grinding by Tea Merchants - Supreme Fineness

Dried tencha is carefully ground by specialized tea merchants using stone mills. Fibers are removed and uniformly adjusted, creating a supreme, silky smooth texture that dissolves effortlessly.
